Carrier 78-102
Description
Coyote Brand Carrier 78-102 is a blend of maltodextrin and dextrin designed as a carrier for flavors, oils and particulate matter. It is particularly useful for spray drying and drum drying flavors. Other typical uses include being used as an adhesive for spices / flavors in baked snacks and nuts. As compared to gum Arabic, Carrier 78-102 offers an especially quick and clean flavor release. Its low viscosity and high solubility make it an excellent replacement for gum Arabic in spray drying applications.
