CAX-0119 Fat Replacer
Description
Coyote Brand CAX-0119 Fat Replacer is a blend of cellulose gel, whey protein, sodium alginate, and xanthan developed for use as a fat replacement in dairy applications. Coyote Brand Stabilizer CAX-0119 forms a soft fatty like gel upon mixing in cold water using high shear. The blend will form a stronger elastic gel when calcium is present in the system.
