- Egg White Replacer for Vegan Meringue
The vegan meringue uses GumPlete™ SH-ER- 276 to replace egg whites, promote aeration, and improve consistency and stability. This replaces the functionality of the egg whites by providing aeration for cell structure and viscosity-building during piping. Structure is maintained during the heating and setting phase, and the system also prevents staling and crumbling. Besides being a problem solver in replacing an ingredient which is experiencing difficult supply issues, there is also a significant cost savings in using this system at low usage levels to replace the egg white. - Low Fat, Reduced Egg, Gluten-Free Cake Pop
Penford Food Ingredients can create customized gluten-free systems using its PenTech™ GF technology. The cake pop is gluten-free, and was made using PenNovo® FR, a non-GMO, potato-based starch to replace 25 to 50 percent of solid fat. Coyote Brand® Stabilizer XA-0823 and Coyote Brand® MC-1217LV were used to both create synergistic combinations with the starch in the formulation and maintain volume and texture; additionally, they help to replace up to 50 percent of the eggs by providing structure and aeration. - Iced Mocha
Using the PenNovo® technology, the iced coffee mocha drink is made with PenNovo®03, an emulsifying starch that acts as a caseinate replacement for non-dairy creamers. Coyote Brand® C-Pro is also used because the cold soluble blend of lambda carrageenan provides an instant smooth, creamy texture. Hydro-Fi™ XCT-0123 is added for increased viscosity and suspension. Penford Food Ingredients’ most recent non-GMO potato-based starch, PenNovo® FR, is used for caloric and saturated fat reduction and is cholesterol-free.
