Coyote Brand Dairy Fat Replacer is a blend of gums developed for use as a fat replacement in dairy applications. Coyote Brand Dairy Fat Replacer forms a soft fatty like gel upon mixing in cold water using high shear. The blend will form a stronger elastic gel when calcium is present in the system.
